TooJay’s, the restaurant known for its generous servings of homemade, New York deli favorites, has named Peter Cowley the General Manager of its new Boynton Beach location.

Cowley, who joined TooJay’s in 1988 as a line cook, has worked as kitchen manager, assistant manager, area director and in the food and beverage department at the corporate office. He even created some of TooJay’s signature dishes on the current menu. A true restaurant professional, he began his career at the age of 14 working in a restaurant as a dish washer. “It has been my pleasure to watch TooJay’s evolve from the beginning. We are successful in staying true to our authentic deli heritage and making our staple menu items the same way we did 30 years ago,” said Cowley.

The Boynton Beach TooJay’s recently relocated to 398 N. Congress Ave. at Old Boynton Road. The new Boynton Beach location features fresh contemporary décor while keeping a timeless vintage feel. “We are so excited about our new location. We are receiving great feedback and look forward to serving new guests as well as our long-term loyal guests,” said Cowley.

As the General Manager, Cowley is responsible for managing daily restaurant operations including overseeing human resources, customer service, food preparation and administrative organization. Cowley lives in Jupiter and enjoys fishing and golfing when he is not working.

Founded in 1981, TooJay’s has grown to 27 restaurants throughout Florida and currently serves guests in Palm Beach and Broward counties, the Treasure Coast, the West Coast of Florida, the Orlando area, The Villages, the Space Coast and Polk County.
